Growing tips

🌱Direct sow as soon as soil can be worked in spring, or again in late summer for a fall crop. Beet seeds are clusters — thin to one plant per spot after germination for the best root development.
💧Water consistently for smooth, even roots. Dry spells cause tough, woody texture — mulch helps retain moisture between waterings. Fertile, well-drained soil produces the deepest color and sweetest flavor.
✂️Harvest roots at 1.5 to 3" for peak tenderness, or let them size up to 3–4" for roasting and pickling. Young tops at any stage are delicious — treat like spinach in salads or sautés.
🍽️Roast whole until caramelized, boil and slice for salads, pickle in vinegar brine, or juice for a vibrant, nutrient-dense drink. Pairs beautifully with goat cheese, walnuts, and balsamic vinegar.
