Christmas Lima Bean (Pole)

Christmas Lima Bean is a beautiful heirloom with large, flat seeds mottled in festive maroon and white — a striking pattern that inspired the name and makes them one of the most visually distinctive dried beans available. The flavor is rich, buttery, and slightly sweet with a chestnut-like quality that's outstanding in soups, stews, and as a simple side dish cooked with aromatics and a drizzle of good olive oil. A conversation-starting bean with genuine culinary character.
